Bottled just 3 months on from batch 1 and from the same cask, their 2nd batch of Autlmore is not the carbon copy you might expect. This batch reveals more distillery character as well as a touch of smoke.
The sherry cask influence is refined, clean and elegant, complimenting the lighter character of Aultmore.
Taming the strength to 48.5% gives a more open whisky yet retains body and depth easily lost at lower strengths.
Tasting notes:
Nose: Sherry cask maturation is evident – classic dried fruits, toffee, honey with milky chocolate and coffee in the background. The distillate adds fresh apple, earthy heather notes, dunnage warehouse and a little minerality. Keep nosing and discover faint aromas of Bakewell tart, liquorice and nutmeg.
Palate: The palate delivers the nose with precision. The sherry cask influence has a level of clarity and control that leaves space for the Aultmore to make its mark and they share the limelight well. There’s a light malty note and a touch of smoke emerging, with hints of heather and a gentle minerality that balance the sweetness.
Finish: Medium length moving effortlessly from sherry to heather with a gentle smoky dryness
