This is an old fashioned recipe. They make a strong green tea of fresh oak leaves and add sugar, oranges, lemons and Turkish sultanas. This fruity soup is fermented through to a soft dryness, some aromatic elderflower wine is blended in and the wine is left to clear over winter then they bottle it.
