Bimber Oloroso Cask Batch No. 2, 51.7%

Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.

The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were handmade at their own cooperage. They use direct fire to heat their small copper pot stills, and mature their spirit in hand-selected casks. Finally, their whisky is expertly blended and bottled onsite at their distillery.

Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.

First Fill Bourbon Barrels:
1st fill bourbon barrels impart sweet flavours of vanilla and caramel alongside a creamy texture.

Spanish Oloroso Sherry Butt:
A finishing period in a cask which previously held Spanish oloroso sherry imbues the whisky with a deeper colour and rich notes of fruitcake and nuts

Tasting Notes:
NOSE: Plump raisins and dried berries sit with vanilla cream, malt loaf and gingerbread men whilst dusty cinnamon joins a French crepe with a squeeze of lemon juice.

PALATE: Silky in texture with crushed red berries and quince jelly enriched by chocolate sauce and cracked walnuts. Banana bread and cinnamon swirls join golden syrup while roasted pineapples are tempered by fresh sweet sherry.

FINISH: Lingering ginger and anise spicing alongside fading berry sweetness.
