Their Spring Oak Leaf wine is made from a sweet green tea of freshly picked oak leaves, fruits and flowers. Yeast is blended in and the bubbling mixture is stirred over three days, strained, then left to ferment out. After it clears it is bottled and stored until the flavours have reached a deep understanding.
