A sea breeze carrying last night’s bonfire smoke and a hint of lemon cough sweet. A bit medicinal, but like the nice kind you don’t actually mind taking.
Starts off calm, then casually reminds you it’s still Caol Ila. Smouldering ash, sea salt, and a bit of lemon peel tossed in for good measure. There’s a waxy smoothness underneath it all, like someone ironed out the edges but left the soul intact.
Long and low like a bassline in a slow burner (Think Dance Yrself Clean by LCD Soundsystem). Ashy, salty, and slightly herbal, with a warmth that keeps tapping you on the shoulder like it’s not quite done talking.

You can spend a lot of time trying to be clever with Caol Ila, but sometimes a good cask just does the work for you. This 2007 hogshead sat for 17 years and came out at a very civilised 49%, balancing elegance with just the right amount of filth. It’s coastal, it’s smoky, it’s Caol Ila doing what it does best—no tricks, no weird finishes, no shouting. Just 285 bottles of quietly confident brilliance.
