Harvested under the cool night skies to preserve natural freshness and varietal purity, the Chardonnay and Viognier parcels were handled separately from the outset. After gentle de-stemming, the grapes were pressed softly in an airbag press to obtain clean, delicate juice without excessive tannin extraction.
Following clarification, each juice was inoculated with carefully selected yeast strains chosen to enhance the individual varietal characters. The wines were aged in stainless steel and regularly stirred on their lees to build texture and depth before being blended, fined, finished and bottled.
The name Crooked Mick pays homage to a legendary bushman of Australian folklore, said to have roamed the mythical Speewah. Stories claim he could shear unimaginable numbers of sheep, punt crocodiles into the sky, and shift mountains with ease. Exaggeration or not, Crooked Mick remains an icon, much like the wines of McLaren Vale that bear his name.
