Dailuaine 2011 Wilson & Morgan Casks #302661/64/73/79/80
Details
A typically medium bodied, but still flowery and delicately fruity Speysider, enhanced with a short finish of 14 months in first fill casks from a traditional Spanish bodega, which had been used to mature Oloroso sherry for 60 years. It’s a lively whisky, full of citrusy and fruity notes at the nose: the sherry doesn’t immediately translate into a winey character, but it amplifies oranges, apples and pears to the maximum. The citrusy and slightly sour touch is matched at the palate by a generous helping of sultana raisins and chestnut honey, reaching a great equilibrium between dryness and a sweeter and creamier side. Again, it’s only moderately winey, but it definitely soon turns towards toasted and dry tannic notes. The spiciness and the astringent intensity grow stronger and stronger in the end.
