The grapes are harvested at full maturity during late harvests to express their full tannic and aromatic richness. Traditional vinification methods are employed, including night harvesting to preserve freshness. Fermentation takes place in stainless steel and concrete tanks at controlled temperatures, followed by 6 months of maturation on fine lees to enhance complexity and mouthfeel.
This wine pairs beautifully with grilled or roasted meats, such as duck breast or lamb, as well as mature cheeses. It also complements dishes like veal with beans and tomatoes or even a Thai cucumber salad.
