Notes from Duncan Taylor PRE Octave (ie before it was put into Octave cask):
Colour - Sunlight.
Nose - Sweet vanilla pods and coconut to the fore. Sweet oak notes mingling with pepper and citrus fruits.
Palate - Juicy lime notes, more coconut, and buttery toast. Chewy mouth feel. Touch of oak.
Finish - Oak with citrus notes.

This release (after Octave):
Colour - Full gold.
Nose - Sweet sherry on the nose, slight earthiness emerging and some red fruits coated with dark chocolate.
Palate - More sherry and sweet red fruits. Mint leaves and dark chocolate provide a great balance. Incredibly fresh and lively.
Finish - Very long, sweet and a slight earthiness re emerges.

Ideally paired with Speyside Chocolate from Chocisky.
