After extensive sampling and evaluation across their 50,000 casks maturing on-site, Billy hand-picked just three vintage Pedro Ximénez puncheons to create this ultra-limited release. Their heather honey-forward distillate stands up well to ageing in rich Sherry oak, creating a rich, luxurious malt. The wood has imparted layers of sweetness, offering a palate with decadent chocolate truffles and dark cherries steeped in maraschino syrup. Exceptionally smooth, this elegant expression is one to be savoured. Presented at natural cask strength of 51.1%, without added colouring or chill-filtration for the purest drinking experience.
