Having taken ownership of The GlenAllachie Distillery in 2017, Billy set out drastic modifications to its processes to firmly prioritise quality over quantity. These changes included reducing the distillery’s output by over 80 per cent to allow for greater supervision throughout the maturation journey and increasing the fermentation period to a lengthy 160 hours for an ester-rich spirit.
Representing Billy’s future endeavours, this landmark bottling offers a very special opportunity to gain early access to his peated work before the upcoming range is created and unveiled. Additionally, the exceptional liquid inside every bottle marks the first distillate from The GlenAllachie to be released that Billy has overseen from start to finish.
Made with Speyside peat from St Fergus, the young and feisty spirit was aged in a medley of former Bourbon and Rye barrels, as well as a quantity of virgin oak casks. The outcome is a punchy single malt abundant in smoked almonds, cinnamon sticks and dark chocolate, with puffs of earthy peat smoke.

Tasting notes:
COLOUR: Auburn.
NOSE: Bursting with toasted honeycomb, dried fruits and hazelnut, with hints of smouldering oak, dark chocolate and warm cinnamon apples.
TASTE: Lashings of cinnamon stewed pears, toasted almonds, heather honey and pipe tobacco, followed by smoked barley, vanilla toffee and orchard fruits.
