Highland Park 1988 30YO Signatory 30th Anniversary Cask #755
Details
First founded in 1798, Highland Park was completely rebuilt on the same site in 1825. These days, 30% of the barley used by the distillery is still manned on-site and the single malt it produces has a phenol level around 20 ppm. Distilled on 16th June 1988, this version beautifully illustrates the rich and complex style of this single malt which is so revered by a great many whisky enthusiasts. The feeling of fullness emanating from the aromatic palette, which we would say is "Highland Parkesque", and the malty, earthy and animal power released from the palette of flavours are highlights of a truly enchanting tasting.
Colour: Intense golden yellow
Profile: The heady initial nose is at once earthy / peaty, smoky and fruity (apple). Allowed to breathe, floral aromas become increasingly present. Malted barley marks its territory with huge presence on the attack. It continually flirts with a rooty peat (gentian). The long finish is musky, animal (bacon) and extremely malty.
This whisky was disgorged and bottled under the supervision of Andrew W. Symington (Managing Director) in the Town of Pitlochry on 18th July 2018.
