The first release in Highland Park’s Keystone Series, focusing on the role of peat in the distillery’s production.
Hobbister Moor, located around seven miles from the distillery overlooking Scapa Flow, provides the peat used in production. Formed from layers of heather and plant material over thousands of years, the peat is hand-cut in April and left to dry naturally before being used in kiln fires to dry malted barley.
