The second release in Highland Park’s Keystone Series, focusing on floor malting.
During germination, barley is turned by hand every eight hours over six days to control moisture levels and allow full absorption of peat smoke from Hobbister Moor. While floor-malted barley typically makes up around 20% of production, this release uses 100% floor-malted barley.
