Teaninich 2007 15 Year Old, Berry's Christmas Edition Cask #1903083
Teaninich, located in the northeast Highlands, was founded in 1817. It produces malt whisky to meet high demand from blenders. Unlike other distilleries, Teaninich uses a mash filter rather than the conventional mash tun to extract the worts.
This highland single malt was initially matured in a refill sherry butt, before undergoing two years maturation in a fresh oloroso butt. The sherry wood is quite restrained on the nose, with the fruity distillate displaying a mouth-watering array of zesty green fruit notes. The palate, however, leaves one in no doubt of the sherry maturation: thick dried figs and raisins mingle beautifully with grated apple and lashings of of honey. A little water brings out bursts of wood spice, alongside some of the citrus promised on the nose. Vibrant and fresh, this is a wonderful dram.
