The Tasting Notes
Nose
Unripe cranberries, Autumn leaves, creme de cassis, cinnamon, nutmeg, sultanas and raspberry cordial.
Palate
Dry spice with berry compote. Clove studded oranges, grapefruit juice and crushed spearmint.
Finish
Dry and certainly tannic—some lingonberry jam, cloves and cinnamon.
Details
Although Thompson Bros are not the biggest fans of red wine-aged whisky, this style works well. Full-term maturation tends to soften the tannins and bring more balance through oxidative ageing.
Full term maturation in a red wine barrique
Non-chill filtered and natural colour. This spirit may haze at low temperatures and under dilution.
