"This is craft whisky with a real sense of place. They use locally sourced brewer's yeast to good effect, combining it with distiller's yeast in a long fermentation, followed by slow distillation. It all boosts the orchard fruit flavours and gives it great mouthfeel. There's a touch of lightly peated barley in the mash, which adds complexity." - Sukhinder Singh
