Ireland has a long history of distilling - longer than Scotland’s, some would argue. There has been a resurgence in the number of distilleries – both new and old – opening in recent years. Their Classic Irish single malt comes from Cooley in Dundalk.
The nose is fresh and crisp, with juicy apple, while spicy vanilla notes come forward from the oak. The palate is oily, with a brittle bite of apple acidity, which gives vibrancy.
