Caol Ila 8 Year Old James Eadie's Islay Single Malt Whisky
Details
In 2016, the team at James Eadie made a remarkable discovery - the original whisky ledgers of Victorian brewer and whisky merchant James Eadie. These heavy leather-bound volumes recorded the contents of Mr. Eadie's warehouses and revealed his particular interest in maturing whisky in ex-fortified wine casks.
Inspired by these historic records, James Eadie began exploring a wide range of single malts and cask types, searching for the ideal balance between spirit character and cask influence. Throughout these experiments they repeatedly returned to the bright, coastal style of an Islay single malt from Caol Ila Distillery.
This Caol Ila 8 Year Old has been selected and bottled by James Eadie and finished for over six months in European oak Palo Cortado sherry hogsheads. The finishing period allows the distinctive coastal character of the spirit to remain at the forefront while introducing additional complexity from the rare sherry casks.
The whisky stands as a tribute to the character of the Islay whisky region, while also acknowledging the historic sherry traditions of Jerez - a meeting of Scottish single malt whisky and Spanish cask heritage.
